DESCRIPTION: Our Forest Chicken is an homage to our forest-loving, fur trapping, north-eastern ancestors. We dress our oven roasted, fresh herb marinated, pasture-raised chicken with a blend of chopped spinach, mushrooms and pasture-raised bacon, and serve it with our Brussels sprouts/carrot medley and a side of herb infused beet mash. To bring it all together, pour over our french style forest sauce, slow cooked with coconut cream, garlic, mushrooms and fresh rosemary.
