DESCRIPTION: For this dish we wanted to highly the naturally sweet flavors of fall, with squash and seasonal spices. Our home-made wild boar sausages are served with our fall vegetable medley, apple/pear/caramelized onion chutney and our house made vegetable ferment. Wondering about the flavors of wild boar? Wild boar actually tastes similar to the ground pork we use simply because both animals are fed their natural foraging diets instead of supplemental corn feed. Wild boar however is a leaner meat, higher in zinc, iron and B12. Why choose wild boar? Simply to ensure you get a continuous variety of gut healing nutrients on your plate. Bon appétit!
